This recipe is very easy to prepare, does not require any baking, and the best part is that it's safe to eat raw! Plus, these cookie dough bites are gluten-free, dairy-free, and made with unrefined sugar.

🍴Ingredient Notes
- Coconut Flour - I have not tested this recipe with any other type of flour and would not recommend using anything else.
- Unsweetened Vanilla Coconut Yogurt - Any vanilla yogurt will work!
- Cashew Butter - If you don't have cashew butter you can use almond butter, peanut butter, or sunflower butter for a nut-free alternative.
- Honey - I used Local Hive Honey™. You can also swap for maple syrup! (I would not use a granulated sugar.)
- Vanilla Extract - To give these truffles a cookie dough flavor, you'll need a couple teaspoons of vanilla!
- Salt - Just a pinch of salt to bring out the flavor!
- Mini Chocolate Chips - Any chocolate chips will work, but I used Lily's sugar free & dairy free mini chocolate chips.
- Dark Chocolate - You can use semisweet chocolate chips, dark chocolate chips, milk chocolate chips, or a chocolate bar!
- Coconut Oil - I like adding coconut oil into the melted chocolate to create a silky-smooth consistency.
🍴Step by Step Instructions
Step 1: Making Cookie Dough
In a mixing bowl add cashew butter, unsweetened vanilla coconut yogurt, honey, vanilla extract, coconut flour, and salt. Use a hand mixer to blend until a thick, sticky dough forms.
Next, pour in ¼ cup of mini chocolate chips. Fold together using a spatula.
Step 2: Chilling Cookie Dough
Place the bowl in the refrigerator for 2-3 hours or the freezer for about 30 minutes. This will give the dough time to set so it's easier to work with.
Step 3: Rolling Cookie Dough Balls
When the dough has chilled, use a cookie scoop to make 12-15 cookie dough balls. Place them on a parchment paper lined cookie sheet or plate.
Chill the cookie dough balls for about 15 minutes before dipping in chocolate.
Step 4: Melting Chocolate
Melt the dark chocolate with coconut oil in 20 second intervals in the microwave until it's silky smooth. (Stir each time you remove from microwave.)
Step 5: Dipping Balls
Dip each ball into the melted chocolate using a fork. Remove from the chocolate and allow the excess chocolate to drip off. Place each chocolate covered cookie dough ball on a parchment paper lined cookie sheet or plate.
Store Cookie Dough Truffles in the refrigerator or freezer until you're ready to enjoy!
Expert Tips
- Make sure you use a microwave safe bowl when melting chocolate chips.
- Drizzle extra chocolate over each truffle for a fancier look! (I used a fork!)
- Sprinkle a light dusting of flaky sea salt on the top of each truffle for a salty & sweet combo.
- If the dough still feels sticky, chill in the refrigerator or freezer longer.
- Mini chocolate chips work best for the dough, but you can also use a chopped chocolate bar!
- Use a small cookie scoop to make 12 small balls.

This particular raw dough is completely safe to eat! These truffles do not contain raw eggs which means you cannot get salmonella poisoning.
I drop the cookie dough balls into the melted chocolate and use a fork to spin it around until it is completely coated. Lift it out of the chocolate with the fork and let the excess chocolate drip off.
How to store leftovers
Store leftover Cookie Dough Truffles in the refrigerator or freezer in an airtight container. If you leave them out at room temperature for too long, they will get very soft.
