🍴Ingredient Notes
- Almond Flour - Do not use almond meal, only finely ground almond flour. For more information on almond flour, check out my post almond flour basics post!
- Medjool Dates - Make sure you remove the pit! You'll need to pack them into the measuring cup to get the correct measurement.
- Coconut Oil - I would not suggest swapping for anything else.
Optional Ingredients
The base of this recipe is made with only 3 simple ingredients that give the cookie a lightly sweet flavor and perfectly soft texture.
To give them more of a classic chocolate chip cookie flavor, try adding in a pinch of salt and vanilla extract. I also like to top mine with dark chocolate chips!
🍴Step by Step Instructions
Step 1: Add Ingredients into Food Processor
Start by adding medjool dates, coconut oil, and almond flour into a food processor. If you're adding salt and vanilla extract, you can add that in now as well!
Step 2: Blend Cookie Dough
Blend for a few minutes, scraping down the edges as needed until you reach a dough like consistency.
You'll notice it will clump mostly into one big ball when it's ready!
Step 3: Scoop Cookie Dough
Use a small cookie scoop to place 12 even sized balls to a parchment paper lined baking sheet.
They will not spread much, so you'll need to press them down into a disk shape. Optional, but I like topping them with chocolate chips!
Step 4: Bake Cookies
Bake the cookies at 350 degrees for about 10 minutes.
Expert Tips
- For best results, I suggest using medjool dates. They're large and juicy which makes for a soft texture.
- Check the inside of the dates to make sure they do not have black mold. (It's pretty common!)
- Buy pitted dates to save time!
- Blend the cookie dough mixture until it's a soft and sticky consistency.
- Make sure you press the cookies down into a thick disc because they will not spread while baking.
- Use parchment paper to prevent the cookies from sticking.
How to Store Leftovers
Store leftover cookies in an airtight container at room temperature or in the refrigerator.
To keep them fresh for longer, you can also store them in the freezer!
