All you need is a food processor and a few wholesome ingredients like cashews, medjool dates, pumpkin seeds and a hint of warm cinnamon spice.

🍴Ingredient Notes
- Medjool Dates - The soft dates add natural sweetness and create a sticky texture to hold the nut mixture together. Make sure you remove the pit!
- Raw Cashews - Feel free to swap for almonds, pecans, walnuts, or peanuts!
- Raw Pumpkin Seeds - I use raw unsalted pumpkin seeds.
- Coconut Oil - Do not swap for any other oil.
- Cinnamon - You can also add a little nutmeg or pumpkin spice seasoning.
- Salt - A little salt brings all the flavors together!
Recipe Variations
- Dip the energy balls in dark chocolate to create a no-bake truffle! You can also drizzle chocolate on top.
- You can also press the cinnamon mixture into a square baking dish and pour melted chocolate on top. Sprinkle with flaky sea salt, refrigerate, then cut into bars!
- Swap the cashews for pecans, walnuts, almonds, or peanuts to change the flavor.
- Crumble on top of smoothie bowls or fold smaller balls into my Dairy-Free Vanilla Ice Cream as a great alternative to cookie dough.

Step 1: Blend Ingredients
Start by adding in all of the ingredients into a food processor. Blend and scrape down the edges every 20-30 seconds until you have a sticky dough.
Step 2: Roll into Balls
Roll about two tablespoons of dough and roll into a ball with your hands then place on a parchment paper lined plate. Repeat until all of the nut mixture is gone.
Store this healthy snack in the refrigerator or freezer until you're ready to enjoy!
Expert Tips
- I suggest using a food processor and not a blender for this recipe. It's easier to blend and scrape down the edges.
- Blend the nut mixture until it's pretty smooth and sticks together easily when you press it between your fingers. They shouldn't be chunky.
- Do not use salted nuts in this recipe. I used raw cashews, but feel free to swap for pecans, walnuts, almonds, or peanuts.
- Make sure to use soft dates and not ones that are hard and dried out. I like storing my dates in the refrigerator to keep them fresh.
- These little bites will get a little soft at room temperature especially in the summer, which is why I suggest storing them in the refrigerator or freezer.
How to store leftovers
Store leftover cinnamon energy balls in an airtight container in the refrigerator.
They are also freezer friendly! Store half of the batch in the freezer to keep them fresh for longer.
