Why I love this recipe
This isn't traditional sugar cookie dough! It tastes indulgent, but it's actually made with healthy ingredients you probably have in your kitchen right now. This recipe is lower in sugar, and you don't need any butter!
Serve the cookie dough with fresh fruit for dipping, on top of nice cream, or just eat it by the spoonful! It's a fun recipe that kids and adults will love.

- Unsweetened Vanilla Coconut Yogurt - Any yogurt will work with this recipe. I like using unsweetened yogurt to cut down on sugar.
- Coconut Sugar - You can also use Lakanto Golden Monkfruit for a lower sugar option. Any granulated sugar will work with this recipe.
- Cashew Butter - Any nut butter will work with this recipe! I just love the flavor of cashew butter when creating a sugar cookie flavored dough. If you're nut-free swap for Sunbutter!
- Vanilla Collagen Powder - Any vanilla protein powder or collagen will work with this recipe. I used Primal Kitchen's Vanilla Coconut Collagen!
- Coconut Flour - I have not tested this recipe with any other flour.

Step 1: Mixing
Add yogurt, sugar, cashew butter, vanilla collagen powder, and coconut flour into a bowl. Whip together with a hand mixer until smooth and creamy.
Step 2: Chilling
Chill the dough in the refrigerator for one hour to set. Top with sprinkles! Enjoy!

- Let the dough chill for at least 30 minutes so it has time to set up. The dough will thicken as it chills.
- In my experience, it's easiest to use a hand mixer to create a smooth consistency.
- Feel free to add more or less collagen powder depending on how much protein you'd like!

- Add sprinkles or chocolate chips on top if you're feeling fancy!
