🍴Ingredient Notes
- Unsweetened Vanilla Coconut Yogurt - Any plain or vanilla yogurt will work with this recipe. I like using unsweetened yogurt to cut down on sugar.
- Coconut Sugar - You can also use Lakanto Golden Monkfruit for a lower sugar option, but any granulated sugar will work with this recipe.
- Cashew Butter - Any nut butter will work with this recipe! I just love the flavor of cashew butter when creating a sugar cookie flavored dough. If you're nut-free swap for Sunbutter!
- Vanilla Extract - To get a true vanilla flavor, use a high quality vanilla extract.
- Coconut Flour - I have not tested this recipe with any other flour, but I believe you could use almond flour as a replacement. Just add a tablespoon at a time until you have reached your desired consistency.
- Salt - To bring all the flavors together you'll need a pinch of salt!

Start by adding coconut yogurt, coconut sugar, cashew butter, coconut flour, vanilla extract, and salt into a small mixing bowl.
Step 2: Mix Cookie Dough
Whip together with a hand mixer until smooth and creamy.
Step 3: Chill Cookie Dough
Chill the dough in the refrigerator for one hour to set. Top with sprinkles! Enjoy!
