🍴Ingredient Notes
- Cubed Sweet Potato - I suggest peeling the potatoes, but if you don't have time just give them a good scrub before cutting!
- Salt - Feel free to add more as needed.
- Olive Oil - You can use olive oil, avocado oil, or coconut oil for this recipe!
- Paprika - Feel free to add more or less depending on how much spice you like. You can also add chili powder!
🍴Step by Step Instructions
Step 1: Preparing Potatoes
Start by peeling and cubing sweet potato into small bite sized pieces.
Step 2: Seasoning Potatoes
Next, add cubed sweet potato into a bowl with olive oil, salt, and paprika. Stir until potatoes are evenly coated.
Step 3: Cooking Sweet Potatoes
Then add seasoned potatoes to a pre-heated cast iron skillet. (Use more oil as needed.) Stir around and cover for a few minutes. Repeat until potatoes are soft with crispy edges.
Expert Tips
- Use a cast iron skillet for this recipe! I find they're a great non-toxic and non-stick option for cooking.
- Peel the potatoes before cutting. Although it's not necessary, it tastes better without the skin.
- Pre-heat the skillet before adding the potatoes. This will help to give them a crispy edge.
- Cover the pan in-between stirring! This will steam the potatoes and cook them faster.
Serving Suggestions
The great part about this recipe is that it is extremely versatile! It can be served for breakfast with scrambled eggs and bacon or with a Vegetable Frittata!
For lunch and dinner options I would suggest serving them with Burgers, Roasted Chicken, Grilled Chicken, Fajita Steak, or even as a Thanksgiving Side Dish!
How to store leftovers
Leftovers should be stored in an airtight container in the refrigerator for up to five days. You can also freeze leftovers for up to 3 months!
