I love cooking with chicken sausage because it takes less time to prepare. The sausage I used is precooked so once it's thinly sliced, I brown it on both sides for flavor.
After the rice absorbs most of the creamy sauce, you can fold it back in with the baby spinach.

This healthy weeknight dinner recipe is made with mostly nutrient dense, whole food ingredients! The homemade sauce is completely dairy-free, but still has a rich and creamy flavor thanks to the butternut squash.

Just because this rice skillet is made with healthy ingredients doesn't mean it's lacking in flavor! This rice simmers in the sauce so it absorbs all of the delicious flavors and it gives the rice a super creamy texture.
🍴Ingredient Notes
- Chicken and Apple Sausage - I used the brand Applegate! Their sausage is organic and made with clean ingredients. Any chicken sausage will work, but the flavors of the chicken and apple pair well with this dish.
- Butternut Squash - Peel and cube the butternut squash before cooking.
- Chicken Broth - Any chicken broth, chicken stock, or chicken bone broth will work!
- Baby Spinach - To add some color and extra nutrients, I like folding in baby spinach at the end.
- Uncooked Basmati Rice - I have not tested this recipe with any other type of rice, but I believe it would work with most types of rice! Add more chicken broth as needed.
- Sweet Onion - The onion gives the creamy sauce an extra layer of flavor.
- Garlic - I used fresh garlic, but you can swap for ½ teaspoon of garlic powder.
- Olive Oil - To prevent the vegetables from sticking, use olive oil, avocado oil, or coconut oil.
- Seasoning - Because the sausage is so flavorful, I just used salt and black pepper to enhance the flavors of this dish!
Recipe Variations
- Swap the chicken sausage for chicken breast or chicken thighs. You can precook them in the skillet with salt, black pepper, and garlic powder. Add it back in after the rice is fully cooked.
- Beef this recipe up by adding in more vegetables! Red bell peppers or cauliflower would be great additions.
🍴Step by Step Instructions
Step 1: Cook Chicken Sausage
Start by thinly slicing the chicken sausage and add it into a large pan with olive oil. Sauté on medium heat until they're golden brown on both sides. Then remove the cooked sausage from the pan and set aside.
Step 2: Sauté Vegetables
Next, add in a little more olive oil along with the cubed butternut squash, diced onion, minced garlic, salt, and black pepper. Cover the pan and stir every few minutes until the butternut squash is tender.
Step 3: Blend Butternut Squash Sauce
Once the butternut squash is tender, add in the chicken broth and use an immersion blender to make the creamy sauce. (You can also transfer into a blender.)
Step 4: Simmer Rice
Add the uncooked rice and chicken sausage into the sauce and stir well. Cover the pan and let simmer on low until it's ready.
Step 5: Fold in Spinach & Sausage
Finish by folding in the baby spinach and serve hot!
