What is Lasagna Soup?
Lasagna Soup has all of the ingredients you would find in traditional lasagna, without all the fuss!
Just cook the ground beef with some Italian spices at the bottom of a Dutch Oven or large pot. Then add in the tomato sauce, chicken broth, water, lasagna noodles, and let simmer for 30 minutes.
Finish by stirring in baby spinach for some extra veggies - that's it! It's simple, easy, and good choice for nights you need dinner on the table quickly.

I did not add any cheese, but you could of course use a dairy-free mozzarella cheese. My favorite vegan cheese brand is Miyokos.
This dish would also go well with a few dollops of ricotta cheese or parmesan cheese. * If you can tolerate dairy! *
I also used brown rice lasagna noodles which are a great gluten-free alternative! My favorite gluten-free pasta brand is Jovial.
🍴Ingredient Notes & Substitutions
- Tomato Sauce - I used Primal Kitchen Roasted Garlic Tomato Sauce. Any tomato sauce will work with this recipe.
- Chicken Broth - You can also use bone broth or vegetable broth!
- Ground Beef - You can also sub with ground turkey in place of ground beef! It's important to choose quality meat. I personally love Butcher Box meat because there are no added hormones, and the cows are grass fed AND grass finished.
- Gluten-Free Lasagna Noodles - I used Jovial lasagna noodles. You can also use Capellos - I believe you can find them at Whole Foods, but they also sell them on Amazon! Or Tinkyada - You can find them on Amazon.
- Baby Spinach - If you don't have spinach, you can skip this ingredient, but I love adding in greens when I can!
- Filtered Water - This extra bit of water thins out the soup and allows for the noodles to absorb some of the broth.
- Sweet Onion - The onion adds an extra layer of flavor to this recipe. You can also add a few cloves of minced garlic!
- Olive Oil - You can also use coconut oil or avocado oil.
- Salt - There is already salt in the tomato sauce and usually in the chicken broth, but I like to season the meat while it's cooking before adding in the broth.
- Seasoning - You'll need dried basil, and dried oregano. For an extra boost of flavor, stir in chopped fresh basil at the end. (Or use for garnish!)
🍴Step by Step Instructions
Step 1: Cook Onions
Start by sautéing onions with olive oil in a large pot.
Step 2: Cook Meat
Next, add ground beef, dried basil, dried oregano, and salt. Cook the meat on medium/high heat until it’s 90% cooked through.
Step 3: Add Broth & Noodles
Next, add in chicken broth, tomato sauce, water, and uncooked lasagna noodles. (I suggest breaking them apart so they're not as big!)
Step 4: Simmer Covered
Cover the pot and let simmer for 15 minutes.
Step 5: Add Spinach & Uncover Pot
Uncover the pot, stir in baby spinach, and simmer for an additional 15 minutes. Serve hot!
Expert Tips
- If you like your pasta a little al dente, don't add it in until the last 15 minutes.
- Feel free to swap lasagna noodles for penne, fusilli, or any of your other favorite pasta shapes!
- For some extra spice, add 1 teaspoon of red pepper flakes to the ground beef. You can also stir them in when you add the baby spinach.
- Make sure you uncover the pot for the last 15 minutes to allow for the broth to thicken. (I promise you don't need tomato paste!)
- This dish is best served fresh - after you store it in the refrigerator overnight the noodles will continue absorbing some of the liquid. It still tastes delicious, it's just a bit thicker!
- Serve with gluten-free focaccia bread, almond flour garlic herb bread, or a salad for some extra fiber!
