In the winter there's nothing more comforting than a warm and cozy bowl of soup. This recipe is one of my personal favorites because it's simple, easy, and made with healthy ingredients.
I especially love making one pot meals like this because they're perfect for busy weeknights!
By using precooked chicken sausage, it saves on prep time and adds SO much flavor to this dish.
The combination of vegetables, beans, and chicken sausage creates a healthy yet satisfying meal that will keep you full for hours.
Plus, this hearty soup recipe is great for anyone with dietary restrictions because it's gluten-free, dairy-free, and can easily be made Paleo or Whole30 friendly by swapping the beans for potatoes!
🍴Ingredient Notes
- Chicken Sausage - I used Applegate Sweet Italian Chicken Sausage, but any Italian style chicken sausage will work. (Turkey sausage is fine too!)
- Cannellini Beans - To make this soup a little heartier, I love adding in cannellini beans. You can also use Great Northern Beans!
- Fire Roasted Diced Tomatoes - I love that chunky fire roasted tomatoes add a little texture to this recipe, but you could also add in blended whole peeled tomatoes to thicken the broth instead.
- Chicken Broth - Homemade or store-bought chicken broth will work. You can also swap for vegetable broth.
- Baby Spinach - To add in extra greens, I like stirring in baby spinach after the soup has finished cooking.
- Celery & Carrots - Make sure you chop the vegetables into bite sized pieces. To save time, try using a vegetable chopper!
- Garlic - Fresh garlic will give you the best results, but you could always swap for 1 teaspoon of garlic powder.
- Sweet Onion - Sauteed onions give the base of the soup more depth of flavor.
- Salt & Black Pepper - Add more as needed!
Recipe Variations
- Swap the Italian style chicken sausage for a different flavor to change up the recipe. Applegate has a lot of great options!
- Sometimes I like to use only 2 or 3 sausage links and save the leftovers for other recipes. (Like my Creamy Chicken Sausage Rice!)
- Swap the white beans for pasta or potatoes. If you use pasta, add it in after the soup has finished cooking to prevent it from getting overcooked.
- Try using kale instead of baby spinach.
- For a kick of spice, add in 1 teaspoon of red pepper flakes or try using a spicy chicken sausage!
🍴Step by Step Instructions
Step 1: Sauté Chicken, Onions, and Garlic
Start by adding olive oil, chicken sausage, onions, and garlic into a large pot. Sauté on medium heat until chicken sausage is golden brown.
Step 2: Add in Carrots & Celery
Then add in the carrots and celery and sauté for about 5 more minutes.
Step 3: Add in Broth & Simmer
Finally, add in the fire roasted tomatoes, chicken broth, cannellini beans, salt, and black pepper. Stir well and cover. Let the soup simmer on medium-low heat for about 40 minutes or until vegetables are tender.
Step 4: Stir in Baby Spinach
Once vegetables are tender, add in baby spinach and simmer for an additional 2-5 minutes or until leaves are soft. Serve hot!
Expert Tips
- To save time, use a vegetable chopper to cut the onion, carrots, and celery!
- For best results, I suggest cooking soup in a Dutch Oven. (Any large pot will work!)
- Serve with a slice of toasted gluten-free bread, homemade croutons, or a side salad.
- If you add gluten-free pasta, make sure you cook it separately! Serve a scoop of pasta with each bowl of soup to prevent it from getting soggy.
- After making this recipe a few times, I decided that I enjoy it more when the sausage slices are thinner and cut into a half-moon shape. If they're too big, they take over the flavor of each bite of food.

How to store leftovers
Store leftover Chicken Sausage Soup in an airtight container in the refrigerator for 3-4 days.
You can also transfer half of the soup into a freezer safe container. I suggest using Souper Cubes 2 cup silicone freezer trays to store single servings in the freezer for a rainy day! Freeze up to 3 months!
