Mini Waffle Maker
I'm a sucker for anything mini, especially mini appliances! The Dash Waffle Maker is so cute and only takes a couple minutes to warm up.
If you want to save time, Dash also makes a larger waffle maker that cooks four mini waffles at the same time!
If you don't have a mini waffle maker, a full size works great too!
🍴Ingredient Notes
- Unsweetened Coconut Milk - Any dairy-free milk will work with this recipe.
- Applesauce - Unsweetened works best!
- Eggs - I would not recommend using an egg replacement for this recipe.
- Apple Cider Vinegar - I promise you won't taste it! Apple cider vinegar helps to activate the baking soda and create the dairy free "buttermilk."
- Vanilla Extract - You'll need just a splash for flavor!
- Cassava Flour - I would not recommend swapping for any other flour. Cassava flour is
- Baking Powder + Baking Soda - You'll need both to create a super fluffy pancake!

- Chocolate Chips - Since I’m dairy-free I like to use vegan chocolate chips. I personally love the brands Hu Kitchen and Pascha – they make high quality chocolate that’s dairy-free and soy-free.

- Cubed Banana Pieces - my personal favorite! I usually cut them into small pieces, and mash them into the batter with the hand mixer.

🍴Step by Step Instructions
Step 1: Making the Dairy Free Buttermilk
Start by adding coconut milk and apple cider vinegar into a mixing bowl. Stir together and let sit for 5 minutes. (This creates a dairy-free buttermilk.)
Step 2: Mixing Dry Ingredients
Next add cassava flour, baking powder, baking soda, and salt into a bowl. Whisk together.
Step 3: Mixing Wet Ingredients
Then add eggs, vanilla extract, and applesauce into the coconut milk and apple cider vinegar. Whisk together until you see small bubbles at the top.
Step 4:
Finally, combine the dry and wet mixture with a whisk. It should be a smooth consistency. Set aside while you pre-heat the waffle maker.
Step 5:
If you'd like to add chocolate chips or fruit into the batter. Fold together before cooking the waffles.
Plug in the mini waffle maker and wait until you hear the click or a light flashes on signaling that it's ready to use. Pour about ¼ cup of mixture into the waffle maker and cook for 2 minutes.
Step 4:
After two minutes, pop open the waffle maker and use a fork to pull it out. Repeat until all of the batter is gone. (It should make about 8 waffles.)
Expert Tips
- Spray the waffle maker with coconut oil or any non-stick spray to ensure they don't stick.
- Set a timer for 2 minutes, do not open the waffle maker before the timer goes off.
- Do not add too much batter into the waffle maker or it will spill out.
- Let the apple cider vinegar and coconut milk sit for at least 5 minutes.

Store leftover pancakes in a sealed bag or glass container in the refrigerator. (Make sure they have cooled first.) After about 5 days in the fridge, I would transfer them into the freezer!
