They're made with just bananas, dark chocolate, and cashew butter which makes them a lower sugar and healthier dessert option.
🍴Ingredient Notes
- Peeled Bananas - I prefer using greener bananas because they're high in resistant starch and lower in sugar. (Which is great for gut health!) You can also use ripe bananas for a sweeter treat!
- Dark Chocolate - You can use semisweet chocolate chips, dark chocolate chips, milk chocolate chips, or even a chocolate bar! My favorite dairy-free brands are Pascha and Hu Kitchen.
- Cashew Butter - Any nut butter will work with this recipe - feel free to swap for almond butter or peanut butter! If you have a nut allergy just swap for Sunbutter or Coconut Butter.
- Coconut Oil - I use a small amount of melted coconut oil in the chocolate to create a silky smooth consistency.
Recipe Variations
- To make a banana peanut butter cup, add peanut butter to a banana disc and top it with another banana disc. Dip the entire banana bite into chocolate!
- Instead of cutting the bananas into thin slices, cut two large bananas in half and freeze with a popsicle stick through the center. Dip the banana pops into chocolate and sprinkle with your favorite toppings!
- Dip banana bites in white chocolate for a sweeter option!
- I like dipping half of the banana bites in chocolate, but you can completely cover them in chocolate. (Perfect for chocolate lovers!)
🍴Step by Step Instructions
Step 1: Peel and Slice Bananas
Start by peeling bananas. Cut into small disks and place them on a parchment paper lined baking sheet. Freeze for about 30 minutes.
Step 2: Make Banana Sandwiches
Next, add a generous amount of cashew butter to half of the slices. Then press another half on top of each one to make a "banana sandwich." Place back in the freezer for about 15 minutes.
Step 3: Melt Chocolate
Microwave the dark chocolate and coconut oil in a small bowl. (In 15-second increments.) Stir each time you remove from microwave until it's silky smooth.
Step 4: Dip in Melted Chocolate
Finally, dip half of each bite into the chocolate and place on the parchment paper lined baking sheet. Freeze until you're ready to enjoy!
Expert Tips
- Place banana discs on a parchment paper lined plate or cookie sheet before freezing for easy removal. It's also great for when you dip them in chocolate.
- Freeze the banana slices until they easily peel off of the parchment paper. If they're still mushy it will be difficult to add the nut butter.
- Use a fork or toothpick to dip them and let the excess chocolate drip off before setting them on parchment paper.
- Use excess chocolate to drizzle on top of bananas!
- Make sure you use a microwave-safe bowl when heating the chocolate.
