🍴Ingredient Notes
- Chicken Breast - I used boneless skinless chicken breast for this recipe. Thin cut or regular cut chicken breast will work. The thicker it is, the longer it will need to cook.
- Bell Peppers - Any color bell peppers will work!
- Red Onions - You can also swap for sweet onions.
- Fresh Cilantro - Fresh chopped cilantro works best with this recipe.
- Plain Coconut Yogurt - Any plain yogurt will work. I used dairy-free So Delicious unsweetened coconut yogurt.
- Seasoning - You'll need salt, garlic powder, and black pepper.
Recipe Variations
- Switch up the vegetables! Zucchini, cherry tomatoes, or yellow squash would be great additions to this recipe. You can also swap the red onion for sweet onion.
- Grill the chicken kabobs instead of air frying. Grill at about 350-375 degrees for about 20-25 minutes. Make sure you flip halfway through!
- Bake the chicken kabobs in the oven if you don't have an air fryer or grill. They will probably require an additional 5-10 minutes.
- For additional flavor, toss the vegetables in avocado oil, salt, and black pepper before adding the skewers.

Step 1: Preparing Chicken
Start by cutting chicken into small pieces. (About 2-3inches long.)
Add the chicken pieces to a bowl with coconut yogurt, chopped cilantro, salt, garlic powder, and black pepper. Stir together until chicken is fully coated.
Step 2: Marinating Chicken
Place chicken in the refrigerator to chill for 30 minutes.
Step 3: Preparing Vegetables
Next, prepare the vegetables by chopping into large two-inch chunks. (Make sure you remove onion skin + white membranes from bell peppers.)
Place in a large bowl until you're ready to prepare the skewers.
Step 4: Layering Skewers
When you're ready to assemble the skewers, layer them with red onion, bell pepper, and chicken. Repeat until you have used all of the chicken and vegetables.
Step 4: Air Frying Kabobs
Air fry the kabobs at 375 degrees for about 18-20 minutes. Serve hot!

- If you plan to use wooden skewers or bamboo skewers, make sure you soak them in water first to avoid burning. (Especially if you grill them!)
- Marinate the chicken breast the day before to allow more time for the flavors to soak in.
- Cut vegetables into bite sized pieces so they cook evenly.
- Separate chicken and vegetables if you're serving this dish to vegans or vegetarians.
- The metal skewers get HOT. Be careful when grabbing them to remove the chicken and vegetables.

The first type of air fryer I have is what is shown in this post - the Ninja Foodi Air Fryer Oven. This appliance is bigger and sits on my kitchen counter.
It looks more like a mini oven than an air fryer! You can use a baking tray or the metal basket. (It comes with both.)
This oven can air fry, toast, bake, or dehydrate and flips up to save on counter space when it's not in use. For this recipe I used the baking tray lined with parchment paper for easy cleanup.
Basket Style Air Fryer
The second type of air fryer I have is a basket style air fryer. This air fryer is portable and can be stored in a pantry or cabinet.
Both styles can be used with this recipe, but you'll need to adjust the size of your skewers depending on which one you use.

To store leftovers, remove the meat and vegetables from the skewers. Place in an airtight container and store in the refrigerator for 3-4 days.
