- Vegetables - You'll need zucchini, red onions, and bell peppers. You could also use sweet onions, broccoli, yellow squash, or mushrooms.
- Olive Oil - You can also swap for avocado oil.
- Seasoning - Salt, Paprika, and Garlic Powder.
- Steak - Sirloin steak is a great option for kabobs! You can also purchase pre-cut kabob steak from the store. My favorite place to get meat is from Butcher Box.
- Lime - Just a little lime juice helps to flavor and tenderize the steak!
- Fresh Cilantro - I add cilantro into the steak marinade, but it also serves as a great garnish.
🍴Step by Step Instructions
Step 1: Preparing Vegetables
Start by preparing the vegetables. Cut zucchini into discs, bell peppers into square pieces, and red onion into thick triangle shaped chunks. Keep them all around the same size so they cook evenly!
Step 2: Seasoning Vegetables
Add all vegetables into a bowl with olive oil, salt, paprika, and garlic powder. Stir until the vegetables are evenly coated.
Step 3: Marinating Steak
Next, add steak into a bowl with lime juice, salt, paprika, garlic powder, and freshly chopped cilantro. Stir together until steak is evenly coated. (Marinate for at least 15 minutes for more flavor.)
Step 4: Assemble Kabobs
To assemble kabobs, add a variety of vegetables onto each skewer. Next, add steak to a separate skewer with a piece of red onion between each piece of meat.
Step 5: Grilling
Add the vegetable skewers to a grill that has been pre-heated to 350 degrees. Cook for about 10 minutes and then add steak skewers. Vegetables take about 20 minutes and steak takes about 10 minutes. (Flip skewers halfway through cooking.)

To serve, carefully remove skewers from the grill. Push vegetables and meat off the skewers and onto a platter or plate for easy serving.
