🍴Ingredient Notes
- Chicken Tenders - You can also use chicken breast cut into small pieces! Make sure they're the same size so they cook evenly.
- Teriyaki Sauce - I used Primal Kitchen Thick'n Sticky Honey Teriyaki Sauce.
- Red Bell Pepper - I prefer using red bell pepper for this recipe because it looks nice, but you can also use yellow, orange, or green pepper.
- Red Onion - Sweet onion would also work with this recipe.
- Pineapple Cubes - Fresh cut pineapple works best!
- Salt & Black Pepper - Grilled vegetables don't need much, but you can sprinkle salt and pepper on them before placing on the grill to enhance the flavor.

Sauce
Switch up the flavor by using a homemade teriyaki sauce recipe. The best teriyaki marinade in my opinion is by the brand Primal Kitchen.
They use clean ingredients and they're made without dairy, gluten, or soy! And they also have a variety of Teriyaki marinades to choose from.
Vegetables
You can use any summer vegetables with this recipe! Other great options are zucchini, yellow squash, or sweet onion.
Cooking Method
If you don't have a grill, you can use an indoor grill pan on the stovetop to achieve a similar charred look.

🍴Step by Step Instructions
Step 1: Marinate Chicken
Start by adding the chicken tenders or chicken pieces into a small bowl. Pour in the teriyaki sauce and stir together until the chicken is completely coated. Place in the refrigerator to marinate. (About 30 minutes.)
Step 2: Cut Vegetables & Pineapple
Next, cut the bell pepper and red onion into similar sized pieces. Then, peel and cut the pineapple into large cubes.
Step 3: Assemble Skewers
To assemble the skewers, add a piece of red onion to the bottom followed by pepper, pineapple, and finally the marinated chicken. Repeat until you fill the skewers.
Step 4: Grill Teriyaki Chicken Skewers
Place the chicken kabobs on a medium high heat grill for about 10 minutes on each side. Carefully remove the skewers from the grill and serve hot!
Helpful Recipe Tips
- Marinate the meat overnight for maximum flavor! Cover the bowl with plastic wrap and refrigerate to keep fresh.
- Make sure chicken is around the same size to ensure even cooking. If you use pre-cut chicken tenders, they will be around the same size already!
- Always use a sharp knife to cut meat and vegetables! This will actually help to avoid injury.
- Use a meat thermometer to make sure the chicken has cooked through. The internal temperature should be 165 degrees.

Grains - An easy way to make to extend this meal is by serving the teriyaki chicken kabobs over a bed of rice or quinoa. You can use brown rice or white rice!
