🍴Ingredient Notes
- Flank Steak - Or any thin steak without a bone. I personally love Butcher Box meat because there are no added hormones, and the cows are grass fed AND grass finished!
- Romaine Lettuce - Rinsed and chopped. Any lettuce will work with this recipe!
- Cherry Tomatoes - Any small tomato will work. I like cutting the cherry tomatoes in half.
- Caesar Dressing - I used Primal Kitchen Ceasar Salad dressing because it's dairy-free and made with simple ingredients. You can swap for any salad dressing!
- Lemon - Fresh lemon juice adds a light, summery flavor to this salad.
Crispy Chickpeas
- Chickpeas - Make sure you drain, rinse, and dry the chickpeas.
- Olive Oil - You can also swap for avocado oil.
- Seasoning - Salt, Garlic Powder, and Black Pepper.
🍴Step by Step Instructions
Step 1: Preparing the Chickpeas
Start by tossing the chickpeas with olive oil, salt, garlic powder, and black pepper until evenly coated.
Step 2: Cooking the Chickpeas
Pour chickpeas into a warm skillet and cook for about 15 minutes or until golden brown.
Step 3: Grilling the Steak
Next, add steak to the grill and cook at about 400 degrees for 2-4 minutes on each side. (Depending on how you like your steak!)
Step 4: Assembling the Salad
Chop romaine lettuce and add to a large bowl. Add on cherry tomatoes, crispy chickpeas, sliced steak, lemon juice, and caesar dressing. Toss together until dressing is evenly coated on the lettuce. Enjoy the salad warm or chilled!
Expert Tips
- If you're planning to store leftovers for later, add dressing to individual servings to avoid lettuce from getting soggy.
- Since there's no cheese in this recipe, try adding cubed avocado for a similar creamy texture.
- To make sure the lettuce isn't dry, toss the lettuce with the caesar dressing before adding on all the toppings.
Frequently Asked Questions
Typically, Caesar Salad is made with dressing that contains inflammatory oils like canola oil. This recipe is made with Primal Kitchen dressing that has simple ingredients. I also used grass-fed steak and swapped the croutons for chickpeas which adds fiber.
Yes, you can prepare all of the toppings ahead of time and put the salad together before serving.
How to store leftovers
Leftovers should be stored in an airtight container - I like using glass containers! You can also cover the serving bowl with plastic or reusable wrap.
