    • Avocados - This recipe works best with ripe avocados. If they're too firm, it will be difficult to remove some of the center.
    • Diced Red Onion - For best results, use a vegetable chopper to cut the red onion into small pieces.
    • Diced Bell Pepper - You can use red, orange, or yellow bell pepper with this recipe.
    • Buffalo Sauce - I used Primal Kitchen Dairy-Free Buffalo Sauce.
    • Dairy-Free Feta - My favorite dairy-free feta is by the brand Miyokos. You can find it at Whole Foods or at natural food markets. You can also swap for a drizzle of ranch!
    • Chicken Breast - Use one large piece of chicken or two smaller pieces of chicken.
    • Olive Oil - To marinate the chicken, you'll need a little olive oil or avocado oil.
    • Seasoning - You only need garlic powder, paprika, and salt for the simple marinade.

    🍴Step by Step Instructions

    Step 1: Marinate Chicken Breast

    Start by marinating the chicken in olive oil, paprika, salt, and garlic powder.

    Step 2: Cook Chicken

    Next, cook the marinated chicken breast on a skillet, covered for about 6-8 minutes on each side on medium heat.

    Step 3: Shred Chicken Breast

    Then, remove the chicken from the skillet and add it to a small bowl. Shred the chicken with two forks.

    Step 4: Make Buffalo Chicken Filling

    Add the shredded chicken, diced bell pepper, diced red onion, and buffalo sauce into a large bowl. Mix together until combined.

    Step 5: Prepare Avocados

    Cut each avocado in half and remove the pit. Use a small spoon to scrape out some of the avocado to leave room for more filling. Place the extra avocado in an airtight container for later!

    Step 6: Fill Avocados

    To assemble, stuff the avocado halves with the chicken filling. Top with feta cheese, freshly chopped cilantro, or a drizzle of dairy-free ranch dressing!

    Place the stuffed avocados on a large plate or baking tray to serve.

    • To save time, use a rotisserie chicken. Remove the meat and shred for the filling.
    • Shred the chicken using a hand mixer instead of two forks. It's much quicker and easier!
    • Use a meat thermometer to make sure the chicken has cooked through. The internal temperature should be 165 degrees.
    • Pick avocados that are about the same firmness and size. Wider avocados will have more room to stuff!
    • To save time, make the filling ahead of time and stuff the avocados before serving.
    • Don't scoop out too much of the avocado flesh! Leave a little along the edges and on the bottom. Just scoop enough out so there's more room to add the filling.
    • Use a vegetable chopper to get perfectly cut veggies!

    Salad - Scoop out the entire avocado and shredded chicken mixture to use on top of greens for a simple buffalo chicken salad.
