🍴Ingredient Notes
- Sweet Potato - Try to find rounder, medium sized sweet potato for this recipe. They work best for single serve!
- Tomato Sauce - Any jarred tomato sauce will work with this recipe. I used Primal Kitchen's Tomato Basil Marinara because there is no added sugar.
- Ground Beef - You can also substitute with ground turkey or chicken. It's important to choose quality meat. I personally love Butcher Box meat because there are no added hormones, and the cows are grass fed AND grass finish
- Sweet Onion, Chopped - I love adding onion to the sauce for an extra layer of flavor!
- Salt - Usually tomato sauce has salt, but I like extra salt to flavor the meat while it's cooking.
- Red Pepper Flakes - Totally optional, but if you like a kick of spice, feel free to add red pepper flakes!
🍴Step by Step Instructions
Baking Sweet Potato
Bake the sweet potato at 400 degrees on a parchment paper lined baking sheet for about 50 minutes. (Or until fork tender.)
Making the Sauce
- Next, sauté chopped onions with a little olive oil until translucent.
- Then add in ground beef, salt, and red pepper flakes. Break apart with a wooden spoon while the meat cooks. When the meat is 90% cooked through, pour over the sauce.
- Cover the meat sauce and let simmer on low until the sweet potato are ready to stuff.
Putting it all together
- When the sweet potatoes are fork tender, remove them from the oven. Use a knife to slice down each sweet potato the long way. (Don't go all the way to the end or they will fall apart.) Scoop out *some* of the sweet potato and set aside.
- Next, stuff each sweet potato with a generous amount of the meat sauce. Bake the sweet potato again for about 10 minutes at 350 degrees.
