🍴Ingredient Notes
Healthy Vanilla Cupcakes
For the cupcakes, I used my Gluten-Free & Dairy-Free Vanilla Cupcake Recipe. You could also try using my Gluten-Free & Dairy-Free Chocolate Cupcake Recipe!
Both recipes are made with simple and healthy ingredients. They're also lower in sugar and refined sugar free!
Frosting
Naturally Dyed Blue Frosting
- Dairy-Free Vanilla Frosting - Any vanilla frosting will work! I used Miss Jones Bakes Vanilla Frosting.
- Blue Spirulina Powder - Add more or less depending on the shade of blue you're looking for.
Naturally Dyed Pink Frosting
- Dairy-Free Vanilla Frosting - Any vanilla frosting will work! I used Miss Jones Bakes Vanilla Frosting.
- Freeze Dried Strawberries - Add more or less depending on the shade of pink you want!
I suggest using a food processer to create a smooth and even texture. (Especially with the freeze-dried strawberries.)
Can you use Cake instead of Cupcakes?
Of course!! Use my Almond Flour Vanilla Cake or my Gluten-Free Chocolate Cake and spread the color that will reveal baby's gender in-between two cakes.
Frost the outside of the cake with white frosting to conceal the color!
🍴Step by Step Instructions
Step 1: Cut Center Hole
Start by cutting a small about 1 inch wide and 1 inch deep in the center of each cupcake.
I find cutting at an angle works best so you don't have too big of a hole to fill.
Step 2: Add Colored Frosting
Next, use a spoon or piping bag to fill each cupcake with either blue frosting for a baby boy or pink frosting for a baby girl! Don't fill the hole too high because you don't want the frosting spilling out the edges.
Step 3: Cover Cupcake
Cut the bottom part of the cupcake that you removed so you're left with a little "cap."
Place the cupcake "caps" back on the top of each one to cover up the colored frosting.
Step 4: Frost Cupcakes
Finish by frosting the top of each cupcake with vanilla or chocolate frosting! Enjoy!
Expert Tips
- Use a small sharp knife to cut out the center of each cupcake. Cut at an angle or cut out a small plug so you can fill with the colored frosting.
- Top the cupcakes with pink sprinkles and blue sprinkles, or funfetti sprinkles! I love Supernatural or Watkins naturally dyed sprinkles.
- For cupcake liners, I love the If You Care brand because they're made of parchment paper so they will peel off easily.
- Save time by using a boxed vanilla cupcake mix! Simple Mills makes one that is gluten-free!
How to store leftovers
Leftover cupcakes can be stored at room temperature in an airtight container for 2-3 days.
To keep them fresh for longer, store in the refrigerator for up to a week!
You can also freeze unfrosted cupcakes in a freezer bag for up to 3 months. Defrost in the refrigerator or on the counter and top with frosting when you're ready to serve.
