To give this dairy free ice cream a creamy texture, the base of this recipe is made with full fat coconut milk and the secret ingredient is raw cashews. With only 6 simple ingredients, it's much healthier than anything you'll find in the grocery store!

🍴Ingredient Notes
- Strawberries - To give this ice cream a strong strawberry flavor, I use fresh strawberries.
- Full Fat Coconut Milk - This is one of my favorite dairy-free alternatives for heavy whipping cream or regular dairy milk. (I use the one without guar gum.)
- Coconut Sugar - You can use any granulated sugar for this recipe, but keep in mind that if you use a sugar free alternative like Lakanto Monkfruit, it might alter the texture.
- Raw Cashews - It might seem odd to add nuts, but cashews help give this ice cream a soft and creamy consistency.
- Honey - To give this ice cream a little extra sweetness, I love adding in honey. (Raw honey is also very nutritious!) You can the honey swap for maple syrup.
- Vanilla Extract - I suggest using a high-quality vanilla extract for best results.
- Salt - You need a little salt to enhance the strawberry flavor!
Recipe Variations
- To create a strawberry lemon flavor, try adding in a little lemon juice and lemon zest!
- For a boost of strawberry flavor, fold in freeze dried strawberries or sprinkle them on top before serving.
- If you find it's not sweet enough for your taste, try adding in extra sugar! You can use an extra tablespoon of honey or ¼ cup of coconut sugar.
🍴Step by Step Instructions
Step 1: Prepare Strawberries
Start by removing the stems from rinsed and dried strawberries.
Then cut the strawberries into bite sized pieces so you can measure them accurately. (You'll need 3+½ cups.)
Step 2: Add Ingredients into Blender
Next, add all ingredients into a high-speed blender.
Step 3: Blend Ice Cream Mixture
Blend the ice cream mixture on high until it's smooth and creamy. (About 60-90 seconds.)
Step 4: Churn Ice Cream
Pour the mixture into an ice cream machine and churn for 20-25 minutes.
Step 5: Freeze Ice Cream
Transfer the ice cream mixture into a freezer safe storage container and let chill until you're ready to enjoy!
Expert Tips
- If you don't have an ice cream maker, pour the ice cream mixture into a freezer safe container and freeze for about 4-6 hours or overnight.
- Make sure you roughly chop the strawberries before measuring.
- Because strawberries are on the Dirty Dozen, I always suggest getting organic strawberries when possible.

You can use it for dairy-free ice cream or traditional dairy ice cream recipes.
Blender
To create a smooth and creamy consistency, I recommend using a high powdered blender.
I have the Vitamix A3300 Ascent Series Smart Blender and it's my most used appliance in the kitchen. It quickly purees the strawberries and makes the cashews completely undetectable.
Ice Cream Scooper
To achieve the perfect ice cream scoop, I suggest using an ice cream scooper instead of a spoon.
