🍴Ingredient Notes
- Gluten-Free Bread - Use whatever bread you have on hand! For this recipe I used my Paleo Cassava Flour Bread.
- Frozen Blueberries - I like using frozen blueberries because once they're heated, they have more of a "jam" consistency. Plus, frozen organic blueberries are less expensive!
- Lemon Zest - I used a small hand grater for the lemon zest!
- Honey - If you don't have honey, you can skip this step but it adds a nice layer of flavor! Plus, honey is good for you!
🍴Step by Step Instructions
Step 1: Toasting Bread
Start by toasting the bread until golden brown. (You can use a toaster, oven, or air fryer.)
Step 2: Heating Blueberries
Next add frozen blueberries into a small bowl. Microwave for about 60 seconds, or until hot.
Step 3: Putting it all together
Mash the blueberries with a fork and spoon onto each slice of toast. Finish the toast with a sprinkle of lemon zest and a drizzle of honey. Enjoy hot!
Expert Tips
- Serve the toast hot with the heated blueberries for best results.
- If the blueberries sit on the toast for a long time, the bread might get soggy.
- Make sure you toast the bread until it's golden brown so it's stable enough to hold the toppings!
- If you don't want to heat the blueberries in the microwave, you can also heat them in a small sauce pan on the stove.
- Drizzle the honey on at the end - do not heat the honey to preserve the nutrients.
Serving Suggestions
I'm all about eating "balanced meals" that have a combination of protein, fat, and carbs. This toast would be delicious on the side with scrambled eggs, hard boiled eggs, a veggie packed omelet, or a frittata!
You can also add a layer of nut or seed butter underneath the blueberries for some healthy fats!
For extra protein you could stir the (cooled) blueberries with a scoop of your favorite yogurt!
How to store leftovers
This recipe is best served fresh, but if you have leftovers I would store in an airtight container in the refrigerator. Reheat in a toaster oven until warm.
