Why You'll Love This Recipe
If you're looking for a simple and easy way to cook asparagus, you will love this recipe! All you have to do is chop, toss, and bake. (It's that easy!)
Asparagus is one of my favorite spring vegetables. It can be served with a variety of dishes, and it has great flavor without needing much seasoning!
Plus, asparagus is a great source of fiber!
🍴Ingredient Notes
- Asparagus - A medium-large sized bunch of asparagus works great for this recipe. They are usually around 1 pound.
- Seasoning - To season the asparagus you'll need garlic powder, black pepper, and salt.
- Balsamic Vinegar - Any balsamic vinegar will work with this recipe.
- Olive Oil - I suggest using a high-quality extra virgin olive oil.
Recipe Variations
- Swap the balsamic vinegar for lemon juice.
- Cook in a large skillet on the stovetop instead of in the oven.
- If you're not dairy-free sprinkle on a little parmesan cheese, goat cheese, or pecorino romano cheese before serving.
- Use fresh minced garlic instead of garlic powder for a stronger flavor.
- For an extra balsamic flavor, drizzle a balsamic reduction on top of the asparagus when serving.
- Add grape or cherry tomatoes to the baking tray with the asparagus.
🍴Step by Step Instructions
Step 1: Cut Asparagus Spears
Start by cutting off the last 1-2 inches of the asparagus stalk. Then cut each stalk in half.
Step 2: Marinate Asparagus
Add the asparagus halves into a large mixing bowl with olive oil, balsamic vinegar, salt, garlic powder, and black pepper. Use tongs to mix together until the asparagus is evenly coated.
Step 3: Bake Asparagus
Then, line a large sheet pan with parchment paper. Place the asparagus halves on the baking sheet with a little space between each stalk. Roast asparagus at 375 degrees Fahrenheit for about 15 minutes.
Step 4: Serving
Finally, remove from the oven and serve hot!
Expert Tips
- The easiest way to evenly coat the asparagus in seasoning is by using tongs.
- For best results, do not over bake or they will become tough.
- Try to pick out thicker stalks of asparagus for this recipe. I find they come out better when you bake them. Skinnier stalks can get a little dry and stringy very easily in the oven.
- Use a large baking sheet when making this recipe to ensure that you can spread out a single layer of the asparagus.
Serving Suggestions
You can really serve this healthy side dish with almost any spring or summer meal!
It goes great with most protein like chicken, salmon, or steak.
I find that mashed potatoes pair well as a vegetable side dish with asparagus as well! You could also chop the roasted asparagus and stir into most pasta dishes. (It would go great with my Dairy-Free Alfredo Pasta!)
How to store leftovers
Store leftover balsamic roasted asparagus in an airtight container in the refrigerator for up to 3 days.
If you're looking for a fun way to use up leftovers, chop up the asparagus into bite sized pieces and add into a frittata or omelet for breakfast!
