Strawberry Sunbutter Cups are a fun treat that take about 20 minutes to make! They're dark chocolate cups filled with a strawberry sunbutter mixture. Great allergy friendly snack for kids or adults!

🍴Ingredient Notes
- Dark Chocolate Chips - Any dark chocolate chips will work! My favorite brands are Pascha and Hu Kitchen.
- Sunbutter Butter - You can swap for any nut butter! I love the salty sunbutter flavor mixed with the sweetness of the vanilla and strawberries.
- Freeze-Dried Strawberries - Any brand will work, but I used Fresh Bellies. You can find them on Thrive Market or at Whole Foods.
- Vanilla Collagen Powder - Any vanilla collagen or protein powder will work! I used Primal Kitchen's Vanilla Coconut Collagen powder.
- Coconut Oil - You'll need a small amount in the chocolate to help create a smooth and creamy chocolate.
If you don't have freeze dried strawberries, just mix the sunbutter and vanilla collagen powder together.
When assembling the cups, add an extra layer of strawberry jam or jelly on top before the final layer of chocolate!

🍴Step by Step Instructions
Step 1: Melting Chocolate
Start by adding chocolate chips and coconut oil into a microwave safe bowl. Heat in the microwave in 20 second intervals until smooth and creamy.
Step 2: Making the filling
Next, add sunbutter butter, vanilla collagen, and freeze-dried strawberries into a bowl. Mix together with a fork or spatula.
Step 3: Chocolate Layer
Add all mini muffin liners to a baking sheet. Pour a small amount of melted chocolate into the bottom of each mini muffin liner. Place in the freezer until chocolate is solid.
Step 5: Sunbutter Layer
Then add about 2 teaspoons of the sunbutter mixture into each cup. Use the back of a spoon to press down. Pour over remaining chocolate into each cup until sunbutter mixture is covered.
Step 6: Freezing
Top each sunbutter cup with an extra sprinkle of freeze-dried strawberries and place the tray in the freezer until the chocolate is solid.
Expert Tips
- If you want the chocolate on the sides of the sunbutter cups, swirl around the cup with melted chocolate until it coats the sides of the mini muffin liner.
- Make sure the chocolate is solid before adding the filling.
- Roll the sunbutter mixture into small balls and then flatten into discs before adding into the cups. (Not necessary but it helps!)
- If you don't want the chocolate to harden too much, store in the refrigerator.
- For easy removal try using silicone mini muffin liners!
- Sprinkle crumbled freeze dried strawberries on top of each cup.
