This Easy Baked BBQ Chicken Dinner is one of my favorite ONE PAN meals! If you're new to baking whole chickens, you're going to love how simple this recipe is! You only need a few ingredients, one pan, and about 20 minutes to prep! It's healthy, hearty, and packed with summer flavors! Great for anyone who is Paleo or on Whole30.

You can use any barbeque sauce you have on hand, but I personally love the Primal Kitchen brand because there's no added sugar, and it does not contain soy, canola oil, or unhealthy artificial additives. (It's also Paleo/Keto/Whole30 approved!) I used their Classic BBQ Sauce, but I also LOVE their Hawaiian BBQ Sauce. You might recognize it from my Sweet Potato Crust Pizza!
Ingredient Notes
- Whole Chicken
- BBQ Sauce - I used Primal Kitchen Unsweetened Classic BBQ Sauce
- Cubed Sweet Potato
- Brussels Sprouts - Cut in half
- Sweet Onion - Sliced
- Avocado Oil
- Salt
- Garlic Powder
- Black Pepper
Step by Step Instructions
Preparing the vegetables
- Start by prepping your veggies. Chop sweet potato, brussels sprouts, and onion. Pour them into your large baking dish.
- Mix your avocado oil, salt, garlic powder, and black pepper. Stir the veggies in the baking dish until they're evenly coated. Push them to the outside of the pan, leaving room for the chicken in the center.
Preparing the chicken
- Place the chicken in the middle of the veggies. (Legs facing up.) Pour a generous amount of bbq sauce on the top of the chicken. Use a culinary brush to spread the bbq sauce on the entire chicken. Bake at 375 degrees for 30 minutes.
Baking
- Remove the baking dish, and flip the chicken. (Legs down.) Brush on an even coating of bbq sauce. Stir the veggies, then place the baking dish back in the oven for 30 minutes.
- Remove the pan once more, flip the chicken back over, and give it a second coating on the top. Stir the veggies, and place the baking dish back in the oven for 5-10 minutes.
- Remove the baking dish, and serve! I usually add my veggies into a large bowl, and pre-slice the chicken before bringing it to the table. ENJOY!
How to store leftovers
Store leftovers in an air-tight glass container in the refrigerator for about 5-7 days. (Any longer, and I would freeze them.)
