Dark Chocolate Cherry Cups are the perfect bite sized treat for Valentine's Day or any special occasion! They have a delicious soft and gooey cherry center that's naturally sweetened with honey.

- Cherries - Make sure you remove the pit before roughly chopping. If you don't have fresh cherries, frozen cherries will work too!
- Honey - You can also swap for maple syrup.
- Salt - Just a pinch helps to bring out the flavor.
- Dark Chocolate - My favorite dairy-free and soy-free chocolate brands are Pascha and Hu Kitchen. If you don't have chocolate chips, a chocolate bar will work too!
- Coconut Oil - A small amount of coconut oil mixed with the melted chocolate helps to give it a smooth consistency.
🍴Step by Step Instructions
Step 1: Pit Cherries
Start by pitting cherries then place them on a cutting board.
Step 2: Roughly Chop Cherries
Next, roughly chop the cherries.
Step 3: Cook Cherries
Add the chopped cherries, honey, and salt into a small skillet. Let simmer for 20 minutes covered. (Stirring occasionally.) Once it's done cooking, set aside to cool.
Step 4: Melt Chocolate
Next, add the chocolate chips and coconut oil into a microwave safe bowl. Heat in 20 second increments until the chocolate is smooth.
Step 5: Fill Candy Molds
Add a small amount of chocolate into each candy mold followed by cherry filling. Top each candy mold with more chocolate. Freeze the candies for 4-6 hours.
Step 6: Remove from Candy Mold
Once they have set, pop them out and top with an extra drizzle of chocolate and flaky sea salt. Place in an airtight container until you're ready to serve!
Expert Tips
- If you don't have a silicone candy mold, you can also use mini muffin liners! (Make sure they're non-stick.)
- Let the candy set for at least 4 hours so they do not fall apart when you try removing them from the mold.
- If you use frozen cherries, let them defrost for a bit so it's easier to chop. (And drain any excess water.)
- Top with flaky sea salt and an extra drizzle of dark or white chocolate!
- To save on time, use a cherry pitter!
