🍴Ingredient Notes
- Mixed Greens - Any lettuce will work with this recipe.
- Chicken Cutlets - You can also swap for grilled chicken. Make sure you cut the chicken into thin strips.
- Dairy-Free Caesar Salad Dressing - I used Primal Kitchen Ceasar Salad dressing because it's made with simple ingredients. You can swap for any salad dressing!
- Grain-Free Tortillas - I used Siete Foods Almond Flour Tortillas. They're my go-to for any recipes that require a tortilla! You can find them at Whole Foods, Walmart, and most grocery stores. (Or online!)
🍴Step by Step Instructions
- Start by warming the tortillas on a frying pan or in the microwave. (This will make them more pliable.)
- Next, add mixed greens and dressing into a bowl. Stir together until the greens are evenly coated.
- To assemble, add mixed greens and chicken cutlet slices into a warm tortilla. Wrap tightly and place face down on a hot skillet. Flip when golden brown and serve warm.
Helpful Tips
- The tortillas must be warmed up prior to rolling them or else they will crack and fall apart. I usually heat them in the microwave for about 20 seconds.
- Do not use oil in the pan when heating the tortillas. The wraps will firm up with just a few seconds of heat.
- Place the tortillas folded side DOWN on the skillet.
- Make sure skillet has pre-heated before adding the wraps.
- Do not overcook the wraps or the lettuce will wilt. It should take about 30-60 seconds on each side.
- Use tongs to flip the tortillas.
- Do not overstuff the tortillas or they will fall apart in the pan.
How to store leftovers
Store leftovers in the refrigerator for up to 5 days. (In an airtight glass container.) They're best served fresh, so I like to make just enough for what I'll need that day.
