🍴Ingredient Notes
- Frozen Bananas - I love using frozen bananas because it adds to thick, creamy consistency! For less of a "banana" flavor, cut and freeze when they're light yellow.
- Vanilla Collagen - I used Primal Kitchen Vanilla Coconut Collagen. Any collagen or protein powder will work!
- Unsweetened Shredded Coconut - Toast coconut for maximum flavor. I used finely shredded coconut.
- Full Fat Coconut Milk - It's important to use full fat coconut milk to achieve the thick consistency. (It also has a strong coconut flavor!) You can swap for any non-dairy milk, but it will not be as thick.
🍴Step by Step Instructions
Step 1: Toasting Coconut
Start by toasting shredded coconut in the oven at 325 degrees for a few minutes. (Until golden brown.)
Step 2: Blending
Next add frozen bananas, full fat coconut milk, vanilla collagen, and toasted coconut into a blender. Blend on high until smooth and creamy.
Step 3: Serving
Top each drink with coconut whipped cream and extra toasted coconut!
Expert Tips
- Cut bananas into small discs before freezing. This will make blending much easier!
- Don't forget to toast extra coconut to add on top!
- When toasting coconut, do not walk away! It burns easily.
- Serve with fresh coconut whipped cream. You can find an easy recipe in this post.
- Pour coconut milk into the blender first for easy blending!
- Make sure the coconut milk has been chilled for at least 1 hour.
