- Chicken Breast - Thin sliced works best! You can also pound regular chicken breast to make it thinner. I love using the brand Bell + Evans because it's high quality. (Certified Organic, raised without antibiotics, and they're humanely raised.) Butcher Box is also a great option!
- Egg - I have not tested this recipe without egg, but it might work if you use just mayo!
- Chipotle Mayo - I used Primal Kitchen's Chipotle Lime Mayo made with avocado oil. Any mayo will work for this recipe!
- Gluten-Free Panko Breadcrumbs - I used the brand Ian's because they have minimal ingredients. Any Panko breadcrumbs will work with this recipe!

Step 1: Preparing Ingredients
Start by adding the egg and mayo into a bowl. Mix together until fully combined. In a separate bowl mix together gluten free breadcrumbs and salt.
Step 2: Breading Chicken
Dip the chicken breast into the egg mixture and then into the breadcrumb mixture. Place on a parchment paper lined baking sheet. Repeat until you coat all of the chicken.
Step 3: Air Frying
Next, add the chicken into the air fryer and cook at 375 degrees for about 18 minutes. (Flip halfway!)
Expert Tips
- To keep the chicken from sticking spray your air fryer with a non-stick cooking spray. (Avocado oil, coconut oil, or olive oil work best!)
- If you have an oven style air fryer or use an actual oven for this recipe, make sure to line the baking sheet with parchment paper to prevent the chicken from sticking.
- Don't forget to flip the chicken halfway through!
- If your air fryer is small, cook 2-3 pieces of chicken at a time. Leave a little space between each piece so the chicken can get crispy.
- Use a fork to pick up chicken to dip into egg mixture and panko mixture! This avoids getting your fingers dirty.
