Delicious - These Apple Cinnamon Muffins are fluffy, flavorful, and have apple chunks in every bite! Low Sugar - They are sweetened with coconut sugar which is lower glycemic and unrefined. They can easily be made sugar free by using Lakanto Golden Monkfruit. (Or any sugar-free granulated sugar.) Healthy - This Paleo recipe is made with only a few simple ingredients. I used a combination of almond flour and coconut flour which are both naturally gluten-free.

Ingredients

Dry Ingredients – 1 Cup Almond Flour – ¼ Cup Coconut Flour – 2 Teaspoons Cinnamon – 1 Teaspoon Baking Powder – ½ Teaspoon Baking Soda – ½ Teaspoon Nutmeg – ¼ Teaspoon Salt Wet Ingredients – ⅓ Cup Unsweetened Applesauce – 2 Eggs – ⅓ Cup Coconut Sugar – 1 Teaspoon Vanilla Extract – 1 Teaspoon Apple Cider Vinegar – 1 Cup Apple, Peeled & Cut into bite sized pieces

Dry Ingredients

Start by adding all dry ingredients into a mixing bowl. Whisk together until fully combined.

Wet Ingredients

Next, add all wet ingredients into a large mixing bowl. Whisk together or use a hand mixer.

Fold Together

Pour the dry mixture into the wet mixture. Fold together with a spatula until flour has been absorbed. Pour in apple chunks

Crumble Toppings

Add all crumble ingredients into a small bowl. Use a fork or your hands to create the crumble consistency. Using your hands works best! Add to the top of each muffin.

Baking Muffins

Next, add muffin batter into each muffin tin. Use muffin liners or grease with non-stick spray.

Helpful Tips

Use parchment paper muffin liners or silicone muffin liners! They will easily peel off without sticking. – Don't over mix the muffin batter. Fold in the dry ingredients with a spatula until the flour is absorbed. – Top with a simple glaze for some extra sweetness! I just mixed powdered sugar with non-dairy milk until I reached the consistency I wanted.
