Gluten Free Waffles

Why I love this recipe!

– Mini Waffles are super cute and great for kids! – They're really easy to make! – They're gluten-free and dairy-free which makes them a great allergy friendly option. – Serve them on their own or add them to a Breakfast Board! – They make a great snack! Just top with nut butter and fruit. – They're freezer friendly and great for meal prep!

Mini Waffle Maker

I'm a sucker for anything mini, especially mini appliances! The Dash Waffle Maker is so cute and only takes a couple minutes to warm up. If you want to save time, Dash also makes a larger waffle maker that cooks four mini waffles at the same time! If you don't have a mini waffle maker, a full size works great too!

Ingredients

Wet Ingredients – ¾ Cup Unsweetened Coconut Milk – ¾ Cup Applesauce – 2 Eggs – 1 Tablespoon Apple Cider Vinegar – 1 Teaspoon Vanilla Extract Dry Ingredients – 1+¼ Cup Cassava Flour – 1+½ Teaspoon Baking Powder – ½ Teaspoon Baking Soda – ¼ Teaspoon Salt

Dry Ingredients

Add cassava flour, baking powder, baking soda, and salt into a bowl. Whisk together.

Dairy Free Buttermilk

Add the coconut milk and apple cider vinegar into a mixing bowl. Stir together and let sit for 5 minutes. (This creates a dairy-free buttermilk.)

Mixing

Then add eggs, vanilla extract, and applesauce into the coconut milk and apple cider vinegar. Whisk together until you see small bubbles at the top.

Combining

Finally, combine the dry and wet mixture with a whisk. It should be a smooth consistency. Set aside while you pre-heat the waffle maker.

Cooking Waffles

 Plug in the mini waffle maker and wait until you hear the click or a light flashes on signaling that it's ready to use. Pour about ¼ cup of mixture into the waffle maker and cook for 2 minutes.

Removing Waffles

After two minutes, pop open the waffle maker and use a fork to pull it out. Repeat until all of the batter is gone. (It should make about 8 waffles.)

Expert Tips

Spray the waffle maker with coconut oil or any non-stick spray to ensure they don't stick. – Set a timer for 2 minutes, do not open the waffle maker before the timer goes off. – Do not add too much batter into the waffle maker or it will spill out. – Let the apple cider vinegar and coconut milk sit for at least 5 minutes.
