Fresh water peaches
Start by adding coconut milk, avocado, lime juice, lime zest, coconut sugar, and vanilla extract into a food processor or blender. Blend on high until it becomes a smooth, creamy consistency.
Next, pour into small cups, or mini mason jars. Optional - top with extra lime zest! Place them in the refrigerator to chill for at least an hour.
Add in the full fat coconut milk, powdered sugar and lime zest. Whip for a few more minutes until it becomes thick and fluffy. Place in refrigerator until you're ready to use!
Top each cup with a dollop of coconut whipped cream and a lime wedge. Enjoy!
