Gluten-Free Chocolate Mousse

Gluten-Free Chocolate Mousse is a light and creamy dessert that both kids and adults will love! It's made with only a handful of healthy ingredients and doesn't require much prep time.

Ingredients
  

  • 13.5 Ounces Full Fat Coconut Milk
  • 1 Medium Sized Avocado
  • Cup Cacao Powder
  • Cup Coconut Sugar Any granulated sugar will work!
  • 1 Teaspoon Vanilla Extract
  • ¼ Teaspoon Salt

Instructions
 

  • Add all ingredients into a high-speed blender. Blend until it becomes a smooth and creamy consistency.
  • Next, pour the chocolate mousse into 5 small cups. Place in the refrigerator to set for at least 4 hours.
  • Enjoy chilled!

Notes

Expert Tips

  • Make sure the avocado is ripe. You can tell by giving the avocado a gentle squeeze - if it's slightly squishy you know it's ready.
  • Use a silicone or rubber spatula to scrape out the mousse from the blender. It's very thick and will not pour easily.
  • Stop the blender and scrape down the edges to ensure all ingredients are fully blended into the mousse. (You don't want sneaky chunks of avocado!)
  • Chill the mousse for at least 4 hours so it has time to thicken up.

How to store leftovers

Leftovers should be stored in the refrigerator in airtight containers. (You can also top the dishes with plastic wrap or a reusable wrap.) They will last about 5 days.
