Why I love this recipe!

Healthy Cake Pops are a fun and unique treat for special occasions!  They're made with a homemade gluten-free chocolate cake and have a lot less sugar than traditional cake pop recipes.

Ingredients

Cake Ball – 4 Cups Gluten-Free Chocolate Cake, Crumbled – ½ Cup Full Fat Coconut Milk Just the thick white part at the top of the can! Chocolate Layer – ½ Cup Dark Chocolate Chips – 2 Teaspoons Coconut Oil – ¼ Teaspoon Salt

Cake Dough

Start by adding chocolate cake crumbles into a mixing bowl with full fat coconut milk. Use a spatula to mix until a dough forms. Place in the refrigerator for about 30 minutes to chill.

Rolling into balls

Next, roll the chilled dough into small balls. (Should make about 20.) Place the balls on a parchment paper lined baking sheet. Place in the freezer for about 15-20 minutes.

Dipping in Chocolate

Finally, melt chocolate chips with coconut oil and salt until silky smooth. Dunk each cake pop into the chocolate until fully coated. (Optional - top with sprinkles!) Place in the refrigerator to set for about 30 minutes.
