Easy Lasagna Soup Recipe

Plus, everything gets cooked in one large Dutch Oven.  Delicious - Lasagna soup has all the delicious flavors you know and love from the classic recipe, just simplified into a cozy bowl.  Allergy Friendly - You might be surprised to find out that this recipe is completely gluten-free and dairy-free!

Ingredients

– 24 Ounces Tomato Sauce I used Primal Kitchen Roasted Garlic Tomato Sauce. – 32 Ounces Chicken Broth You can also use bone broth! – 1 Pound Ground Beef – 9 Ounces Gluten-Free Lasagna Noodles I used Jovial lasagna noodles. – 4-6 Cups Baby Spinach – 2 Cups Filtered Water – 1 Sweet Onion – 1 Tablespoon Olive Oil – 1 Teaspoon Salt – ½ Teaspoon Dried Basil – ½ Teaspoon Dried Oregano

Sauté Onions

Start by sautéing onions with olive oil in a large pot.

Add Beef & Spices

Next, add ground beef, dried basil, dried oregano, and salt. Cook the meat on medium/high heat until it’s 90% cooked through.

Add in Broth & Noodles

Next, add in chicken broth, tomato sauce, water, and uncooked lasagna noodles. (I suggest breaking them apart so they're not as big!)

Simmer Soup

Cover the pot and let simmer for 15 minutes. Uncover the pot, stir in baby spinach, and simmer for an additional 15 minutes. Serve hot!

Serving

Serve with gluten-free focaccia bread, almond flour garlic herb bread, or a salad for some extra fiber!

Helpful Tips

If you like your pasta a little al dente, don't add it in until the last 15 minutes. – Feel free to swap lasagna noodles for penne, fusilli, or any of your other favorite pasta shapes! – For some extra spice, add 1 teaspoon of red pepper flakes to the ground beef. You can also stir them in when you add the baby spinach.
