Easy - Banana Bites only require 4 simple ingredients and minimal prep time! Allergy Friendly - This recipe is naturally gluten-free and can easily be made dairy-free, nut-free, and Vegan! I used cashew butter as the filling, but if you have a nut allergy just swap with Sunflower Seed Butter.

Ingredients

– 3-4 Peeled Bananas – ⅓ Cup Dark Chocolate – 3-4 Tablespoons Cashew Butter Any nut butter will work with this recipe! – 1 Teaspoon Coconut Oil

Cut Bananas

Start by peeling bananas. Cut into small disks and place them on a parchment paper lined baking sheet. Freeze for about 30 minutes.

Stuff Bananas

Next, add a generous amount of cashew butter to half of the banana disks. Place a second disk on top of each one to make a "sandwich." Place back in the freezer for about 15 minutes.

Melt Chocolate

Microwave the dark chocolate and coconut oil in a small bowl. (In 20 second increments.) Stir each time you remove from microwave until it's silky smooth.

Dip in Chocolate

Finally, dip half of each banana bite into the chocolate and place on the parchment paper lined baking sheet. Freeze until you're ready to enjoy!

Helpful Tips

– Place banana discs on parchment paper before freezing for easy removal. It's also great for when you dip them in chocolate. – Freeze the banana slices until they easily peel off of the parchment paper. If they're still mushy it will be difficult to add the nut butter. – Dip banana bites in white chocolate for a sweeter option!
