– 6-8 Medium sized Sweet Potato – 24 Ounces Tomato Sauce – 1 Pound Ground Beef Sub with ground turkey or chicken. – 1 Sweet Onion, Chopped – ½ Teaspoon Salt – 1 Teaspoon Red Pepper Flakes

Baking Sweet Potato

Bake sweet potato at 400 degrees on a parchment paper lined baking sheet for about 50 minutes. (Or until fork tender.)

Sauté Onions

Next, sauté chopped onions with a little olive oil until translucent.

Adding Beef

Then add in ground beef, salt, and red pepper flakes. Break apart with a wooden spoon while the meat cooks. When the meat is 90% cooked through, pour over the sauce.

Adding Sauce

Cover the meat sauce and let simmer on low until the sweet potato are ready to stuff.

Cutting Sweet Potato

Use a knife to slice down each sweet potato the long way. Scoop out *some* of the sweet potato and set aside.

Baking

Next, stuff each sweet potato with a generous amount of the meat sauce. Bake the sweet potato again for about 10 minutes at 350 degrees.
