Easy Vegetable Frittata Recipe

Equipment

  • Hand Mixer or Whisk
  • Oven friendly pan, cast iron skillet, or pie dish.

Ingredients
  

  • 9 Eggs
  • 2 Cups Baby Spinach
  • ½ Sweet Onion - Diced
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • ¼ Teaspoon Garlic Powder

Instructions
 

  • Start by adding all of your eggs, garlic powder, salt, and black pepper to a mixing bowl. Whip them with a whisk or hand mixer until fully combined. Set in the fridge while you prep your vegetables!
  • Slice your onion in half, and chop into small cubes. Saute with your favorite healthy oil until tender. (If you're using other vegetables, you can cook them with the onion.) Turn the stove off, and stir in your spinach at the end.
  • Once it's mostly wilted down, set the pan aside to cool for a few minutes before adding your eggs. If you're using a pie dish to bake, you don't have to wait. Just transfer your veggies into the pie dish, and stir in your eggs.
  • Once the vegetables are mixed in, bake at 325 degrees for about 15-20 minutes. (Depending on how big you pan is.) Once it's done baking you can remove from the oven, slice and ENJOY!
