Chocolate cakes with melted marshmallows on top.

Mini Chocolate Cakes

Servings 4

Ingredients
  

Wet Ingredients

  • 3 Eggs
  • 2 Tbs. Coconut Oil
  • 1 Tsp. Vanilla

Dry Ingredients

  • 1 Cup Almond Flour
  • ¼ Cup Cacao Powder
  • ¼ Tsp. Salt
  • ¼ Tsp. Baking Soda
  • ¼ Cup Coconut Sugar You can sub Lakanto Monkfruit if sugar free.

OPTIONAL

  • 4 Mashmallows cut into small pieces OR ½ cup chocolate chips. You can sprinkle them on top, or fold them into the mixture. I'll link my favorite chocolate chip and marshmallow brands below.

Instructions
 

Making the Cake Batter

  • Start by adding almond flour, cacao powder, baking soda, salt, and coconut sugar. Whisk together - make sure to get any clumps out.
  • Next add eggs, vanilla extract, melted coconut oil into a small bowl. Blend with a whisk or hand mixer until fully combined.
  • Finally, fold in the marshmallow chunks or chocolate chips. (Or both!!)

Baking

  • Next, use coconut oil or non-stick spray and lightly coat each mini cake dish.
  • Add the batter into the dishes - it should yeild 4 mini cakes.
  • Bake the cakes for 15 minutes at 350 degrees.
  • Remove from oven, let cool for at least 5-10 minutes, then ENJOY!
