Chocolate Covered Dates with Almonds are a fun bite sized treat! They're made with four simple ingredients and only take a few minutes to prepare. If you're looking for a healthier snack, you have to try this recipe!
Start by cutting down the middle of each date. (The long way.) Remove the pit and place on a parchment paper lined plate or baking sheet.
Next, stuff each date with raw almonds. (Or any nut!)
Melt dark chocolate in the microwave in 20 second increments until it is melted.
Finally, dip stuffed dates in dark chocolate and sprinkle with shredded coconut.
Place dates on parchment paper and place in the refrigerator or freezer to set.

If you don't want to completely cover the dates in chocolate, you could always drizzle it on top instead of dipping them.
Place stuffed dates on a parchment paper lined plate or baking sheet for easy clean up. Once they're chilled, remove and add to storage container.
Let chocolate dry for about 30 seconds before adding shredded coconut or it will absorb into the chocolate.
