Steak Fajita Tacos

Ingredients
  

  • 8 Grain-Free Tortillas I used Siete cassava flour tortillas!

Steak

  • 20 Ounces Ribeye Steak
  • ½ Teaspoon Salt
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Cumin
  • ½ Teaspoon Chili Powder
  • ¼ Teaspoon Paprika

Peppers & Onions

  • 3 Sweet Onions
  • 2 Red Onions
  • 4 Bell Peppers
  • ¼ Cup Freshly Chopped Cilantro
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Salt
  • 1 Teaspoon Chili Powder
  • 1 Teasoon Cumin
  • ½ Teaspoon Paprika
  • ½ Teaspoon Garlic Powder

Instructions
 

Preparing Steak

  • Start by adding steak into a large bowl with salt, garlic powder, cumin, chili powder, and paprika. Mix together until steak is completely coated with spices. Marinate for a minimum of 15 minutes.
  • Add steak to a pre-heated grill and cook for about 3-5 minutes on each side. (Depending on how well done you like your steak!)

Preparing Vegetables

  • Next, add sliced onions and bell peppers into a large bowl with garlic powder, salt, chili powder, paprika, cumin, and olive oil. Stir until vegetables are evenly coated with spices.
  • Add to a large sauté pan and stir every few minutes to make sure they don't stick. After about 10 minutes, place the cover on the pan to steam the vegetables until tender.
  • When the vegetables are tender, stir in the freshly chopped cilantro.

Assembling Tacos

  • When you're ready to assemble the tacos, warm tortillas on the grill or in a skillet for 30 seconds on each side. Next, add vegetables and thinly sliced steak. Serve hot!

Notes

Expert Tips

  • If you're using Siete wraps, you MUST heat the wraps before serving. Microwave, grill, or heat on a skillet for about 15-30 seconds.
  • Do not cut steak until you're ready to serve. This will keep it super juicy!
  • Cut steak very thin for serving.
  • If you don't have individual spices, swap for a pre-made taco mix! Use half for the steak and half for the vegetables.
  • To save time, pre-cut vegetables and marinate the steak the day before.
