Instructions
Start by adding the egg and mayo into a bowl. Mix together until fully combined.
In a separate bowl mix together gluten free breadcrumbs and salt.
Dip the chicken breast into the egg mixture and then into the breadcrumb mixture. Place on a parchment paper lined baking sheet. Repeat until you coat all of the chicken.
Next, add the chicken into the air fryer and cook at 375 degrees for about 18 minutes. (Flip halfway!)

Expert Tips
To keep the chicken from sticking spray your air fryer with a non-stick cooking spray. (Avocado oil, coconut oil, or olive oil work best!)
If you have an oven style air fryer or use an actual oven for this recipe, make sure to line the baking sheet with parchment paper to prevent the chicken from sticking.
Don't forget to flip the chicken halfway through!
If your air fryer is small, cook 2-3 pieces of chicken at a time. Leave a little space between each piece so the chicken can get crispy.
Use a fork to pick up chicken to dip into egg mixture and panko mixture! This avoids getting your fingers dirty.
