Healthy Cake Pops (Gluten-Free)

Healthy Cake Pops are a fun and unique treat for special occasions! They're made with a homemade gluten-free chocolate cake and have a lot less sugar than traditional cake pop recipes.

Ingredients
  

Cake Ball

  • 4 Cups Gluten-Free Chocolate Cake, Crumbled
  • ½ Cup Full Fat Coconut Milk Just the thick white part at the top of the can!

Chocolate Layer

  • ½ Cup Dark Chocolate Chips
  • 2 Teaspoons Coconut Oil
  • ¼ Teaspoon Salt

Instructions
 

  • Start by adding chocolate cake crumbles into a mixing bowl with full fat coconut milk. Use a spatula to mix until a dough forms. Place in the refrigerator for about 30 minutes to chill.
  • Next, roll the chilled dough into small balls. (Should make about 20.) Place the balls on a parchment paper lined baking sheet. Place in the freezer for about 15-20 minutes.
  • Finally, melt chocolate chips with coconut oil and salt until silky smooth. Dunk each cake pop into the chocolate until fully coated. (Optional - top with sprinkles!) Place in the refrigerator to set for about 30 minutes. Enjoy!
