Start by rinsing all the apples. Cut them into thin slices, and measure out 8 cups.
Add the apples into a large mixing bowl along with the water, cinnamon, tapioca flour, and salt. Stir until they're evenly coated.
Next, pour the apple slices into a medium sized casserole dish. Bake at 350° for 25 minutes. Remove from the oven to stir, and place back in the oven for 5-10 minutes. (They should still be firm.)
Remove from the oven, and serve hot with your favorite dairy-free ice cream or coconut whipped cream!
