Fajita Peppers and Onions

Whole30 Baked Peppers and Onions is one of the easiest dishes you'll ever make! Once the vegetables are prepared, just toss them in the spices, and bake right in a cast iron skillet. It's great for fajitas, burrito bowls, or even meal prep!

Equipment

  • 12" Cast Iron Skillet

Ingredients
  

  • 6 Cups Sliced Bell Peppers
  • 3-4 Cups Sliced Sweet Onion
  • 1 Tablespoon Olive Oil You can sub with Avocado Oil.
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Salt
  • ½ Teaspoon Cayenne Pepper
  • ½ Teaspoon Garlic Powder

Instructions
 

  • Start by adding sliced peppers and onions into the cast iron skillet or a bowl. (If it's easier to stir.) Pour over all the spices and olive oil, and stir well.
  • Bake the peppers and onions in the cast iron skillet for about 30 minutes at 350 degrees, or until vegetables are tender. (Stir halfway through.)
  • Serve hot, enjoy!
