This Avocado Lime Pudding is light, creamy, and refreshing! The recipe only takes a few minutes to make, and all you need is a blender or food processor!
Start by adding coconut milk, avocado, lime juice, lime zest, coconut sugar, and vanilla extract into a food processor or blender. Blend on high until it becomes a smooth, creamy consistency.
Next, pour into small glass jars. Optional - top with extra lime zest!
Place the avocado pudding in the refrigerator to chill for at least 2-4 hours before enjoying! This will allow the flavors to blend and the pudding to thicken up. Enjoy chilled!

Expert Tips
For best results, use ripe avocados for this recipe! Unripe avocados are not as soft and creamy which will alter the texture of the final product.
I recommend using a high speed blender like a Vitamix for this recipe. You can use a food processor, but it will not come out as smooth.
The pudding needs to chill in the refrigerator for at least 1 hour. As it sets, the texture and flavor get even better!
