I love a good sheet pan meal. They're easy to make, and in less than an hour you have a delicious, healthy meal for the whole fam! These Sheet Pan Spicy Meatballs are full of flavor, and go well with most vegetables! For this recipe I used a mixture of onions, green peppers, and sweet potatoes, but feel free to switch it up! I also like using two pans sometimes so I can squeeze in extra vegetables! Plus this meal is grain-free & dairy-free which makes it perfect for anyone who is on Whole30 or a Paleo diet.
1Tbs.Avocado OilCan substitute with Coconut Oil or Olive Oil.
Peppers + Onions
1Sweet OnionDiced
2Green Peppers
1TablespoonAvocado OilCoconut Oil/Olive Oil
1 TeaspoonSalt
½TeaspoonBlack Pepper
Instructions
Preparing the Meatballs
For the meatballs, add all ingredients into a mixing bowl. Using a large spoon to thoroughly mix everything together. Add 1 ½ inch balls onto your pan until you use up the whole mixture.
Preparing the Vegetables
For sweet potatoes, dice into small cubes then toss with the cayenne pepper, salt, and oil. Add to your baking sheet.
For onions and peppers, dice them into small pieces. Toss in oil, salt and pepper. Add to your baking sheet.
Roast for about 30 minutes. (Stir vegetables at the halfway point.)
