Cookie Dough Truffle Recipe

Cookie Dough Truffles are a healthy, no-bake treat that is sure to impress your family and friends! The soft and gooey dough is coated in a layer of dark chocolate which makes them simply irresistible! Plus, you would never guess that they're made with simple ingredients like coconut flour, honey, and cashew butter.

Equipment

  • 1 Baking Sheet
  • 1 Parchment Paper

Ingredients
  

  • Cup Coconut Flour
  • Cup Unsweetened Vanilla Coconut Yogurt Any vanilla yogurt will work!
  • ¼ Cup Cashew Butter
  • ¼ Cup Honey
  • 2 Teaspoons Vanilla Extract
  • ¼ Teaspoon Salt
  • ¼ Cup Mini Chocolate Chips I used Lily's sugar free mini chocolate chips.

Chocolate Layer

  • ½ Cup Dark Chocolate Chips Any chocolate chips will work with this recipe!
  • 1-2 Teaspoons Coconut Oil

Instructions
 

Making Cookie Dough

  • In a mixing bowl add cashew butter, unsweetened vanilla coconut yogurt, honey, vanilla extract, coconut flour, and salt. Use a hand mixer to blend until a thick, sticky dough forms.
  • Next, pour in ¼ cup of mini chocolate chips. Fold together using a spatula.

Chilling Cookie Dough

  • Place the bowl in the refrigerator for 2-3 hours or the freezer for about 30 minutes. This will give the dough time to set so it's easier to work with.

Cookie Dough Balls

  • When the dough has chilled, use a cookie scoop to make 12-15 cookie dough balls. Place them on a parchment paper lined baking sheet or plate.
  • Chill the cookie dough balls for about 15 minutes before dipping in chocolate.

Melting Chocolate

  • Melt the dark chocolate with coconut oil in 20 second intervals in the microwave until it's silky smooth. (Stir each time you remove from microwave.)
  • Dip each ball into the melted chocolate using a fork. Remove from the chocolate and allow the excess chocolate to drip off. Place each chocolate covered cookie dough ball on a parchment paper lined baking sheet or plate.
  • Store Cookie Dough Truffles in the refrigerator or freezer until you're ready to enjoy!

Notes

Expert Tips

  • Make sure you use a microwave safe bowl when melting chocolate chips.
  • Drizzle extra chocolate over each truffle for a fancier look! (I used a fork!)
  • Sprinkle a light dusting of flaky sea salt on the top of each truffle for a salty & sweet combo.
  • If the dough still feels sticky, chill in the refrigerator or freezer longer.
  • Mini chocolate chips work best for the dough, but you can also use a chopped chocolate bar!
  • Use a small cookie scoop to make 12 small balls.

How to store leftovers

Store leftover Cookie Dough Truffles in the refrigerator or freezer in an airtight container. If you leave them out at room temperature for too long, they will get very soft.
