Apple Crumble Muffins (Gluten-Free)

Ingredients
  

Dry Ingredients

  • 1 Cup Almond Flour
  • ¼ Cup Coconut Flour
  • 2 Teaspoons Cinnamon
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Nutmeg
  • ¼ Teaspoon Salt

Wet Ingredients

  • Cup Unsweetened Applesauce
  • 2 Eggs
  • Cup Coconut Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Apple Cider Vinegar
  • 1 Cup Apple, Peeled & Cut into bite sized pieces

Crumble

  • 2 Tablespoons Almond Flour
  • 2 Tablespoons Coconut Sugar
  • 1 Tablespoon Coconut Oil (Not Melted)
  • ½ Teaspoon Cinnamon

Instructions
 

Making Muffin Batter

  • Start by adding all dry ingredients into a mixing bowl. Whisk together until fully combined.
  • Next, add all wet ingredients into a large mixing bowl. Whisk together or use a hand mixer.
  • Pour the dry mixture into the wet mixture. Fold together with a spatula until flour has been absorbed. Pour in apple chunks
  • Next, add muffin batter into each muffin tin. Use muffin liners or grease with non-stick spray.

Crumble Topping

  • Add all crumble ingredients into a small bowl. Use a fork or your hands to create the crumble consistency. Using your hands works best! Add to the top of each muffin.

Baking and Cooling

  • Bake the apple crumble muffins at 350 degrees for 30 minutes.
  • Remove from the oven when they're done. Carefully remove each muffin if you used muffin liners and place them on a metal cooling rack. If you greased the pan, wait until they're room temperature to remove.

Notes

Expert Tips

  • Use parchment paper muffin liners or silicone muffin liners! They will easily peel off without sticking.
  • Don't over mix the muffin batter. Fold in the dry ingredients with a spatula until the flour is absorbed.
  • Top with a simple glaze for some extra sweetness! I just mixed powdered sugar with non-dairy milk until I reached the consistency I wanted.
  • Let the muffins set for at least 30 minutes before enjoying.
  • Use your hands to mix the crumble topping. The warmth of your hands help to melt the coconut oil.
