½ Cup Unsweetened Vanilla Coconut Yogurt Any yogurt will work with this recipe! ⅓ Cup Cacao Powder Or cocoa powder. ¼ Cup Golden Monkfruit Swap for coconut sugar or any granulated sugar. 2 Scoops Vanilla Collagen Or any vanilla protein powder. 3 Tablespoons Coconut Flour 3 Tablespoons Cashew Butter Swap for Sunbutter or any nut butter.
Start by adding all ingredients into a mixing bowl. Use a hand mixer to blend until it's a smooth, creamy consistency.
Transfer the brownie batter into a glass container with a cover. Place in the refrigerator to set for about 30-60 minutes.
Enjoy as is, or fold in chocolate chips!
Expert Tips
Let the brownie batter chill for at least 30 minutes so it has time to set up. The batter will thicken as it chills.
In my experience, it's easiest to use a hand mixer to create a smooth consistency.
Feel free to add more or less collagen powder depending on how much protein you'd like!
If you use unflavored collagen , you might want to add extra sugar for sweetness!
