Ingredients
8CupsCubed Sweet Potato
1TeaspoonSalt
1TablespoonOlive Oil
½TeaspoonPaprika
Instructions
Start by peeling and cubing sweet potato into small bite sized pieces.
Next, add cubed sweet potato into a bowl with olive oil, salt, and paprika. Stir until potatoes are evenly coated.
Then add seasoned potatoes to a pre-heated cast iron skillet. (Use more oil as needed.) Stir around and cover for a few minutes. Repeat until potatoes are soft with crispy edges.

Expert Tips
Use a cast iron skillet for this recipe! I find they're a great non-toxic and non-stick option for cooking.
Peel the potatoes before cutting. Although it's not necessary, it tastes better without the skin.
Pre-heat the skillet before adding the potatoes. This will help to give them a crispy edge.
Cover the pan in-between stirring! This will steam the potatoes and cook them faster.
