Whole30 Italian Stuffed Sweet Potatoes

Ingredients
  

  • 6-8 Medium sized Sweet Potato
  • 24 Ounces Tomato Sauce
  • 1 Pound Ground Beef Sub with ground turkey or chicken.
  • 1 Sweet Onion, Chopped
  • ½ Teaspoon Salt
  • 1 Teaspoon Red Pepper Flakes

Instructions
 

Baking Sweet Potato

  • Bake sweet potato at 400 degrees on a parchment paper lined baking sheet for about 50 minutes. (Or until fork tender.)

Making the Sauce

  • Next, sauté chopped onions with a little olive oil until translucent.
  • Then add in ground beef, salt, and red pepper flakes. Break apart with a wooden spoon while the meat cooks. When the meat is 90% cooked through, pour over the sauce.
  • Cover the meat sauce and let simmer on low until the sweet potato are ready to stuff.

Putting it all together

  • When the sweet potatoes are fork tender, remove them from the oven. Use a knife to slice down each sweet potato the long way. (Don't go all the way to the end or they will fall apart.) Scoop out *some* of the sweet potato and set aside.
  • Next, stuff each sweet potato with a generous amount of the meat sauce. Bake the sweet potato again for about 10 minutes at 350 degrees.

Notes

How to store leftovers

Leftovers can be stored in an air tight glass container for up to 5 days in the refrigerator. You can also freeze leftovers! To re-heat just bake in the oven at 350 degrees for about 10-15 minutes.
