– 3-4 Pound Whole Chicken Make sure you remove the giblets! – ½ Lemon, Juiced – 1 Tablespoon Olive Oil or avocado oil. – ½ Teaspoon Salt – ½ Teaspoon Dried Thyme Or sub with 1 tablespoon fresh thyme. – ¼ Teaspoon Garlic Powder – ¼ Teaspoon Black Pepper – 4 Cups Diced Yukon Gold Potatoes – 1+½ Cups Chopped Carrots – 1 Cup Chopped Celery – 1 Sweet Onion, Diced – 1 Tablespoon Olive Oil – ½ Teaspoon Salt – ½ Teaspoon Dried Thyme – ¼ Teaspoon Garlic Powder – ¼ Teaspoon Black Pepper

Preparing the Vegetables

Chop all vegetables, add them into a large bowl, and stir in olive oil, and seasoning.

Preparing the Chicken

Add vegetables, and chicken into a large roasting pan. Sprinkle on the chicken all seasoning, olive oil, and lemon juice.

Baking

Bake at 375 degrees for about 20-25 minutes per pound. The top should be golden brown!
